Con el tiempo se uñeron sus hijos: Florencia, Giuliana, Juan Cruz y Valentino. Nuestra misión es darles a nuestros invitados un pedacito de la cultura gaucha Argentina en Los Angeles. Ona vez al mes abrimos nuestro hogar para brindarles sabores auténticos, carne de calidad, música en vivo y comunidad.
The Gauchos Catering is a family run and operated business. Juan Jose "El Gringo" Orlandoni began offering his grilling services in 2009. As time went on, his children: Florencia, Giuliana, Juan Cruz and Valentino joined in. Our mission is to give our guests a slice of our Argentine gaucho culture in Los Angeles. Once a month we open our home to offer authentic flavors, quality meats, live music and community.
We start by making a fire, then we hang the meat on "stakes" or "crosses," starting with the "bone" side, and we begin turning it until it's ready.
As they arrive to the event, the guests become intrigued by the visual presentation of the grill. You can hear the charcoal crackling as the grease drips, and the aroma of meat and smoke opens up your appetite.
"Asado a la estaca" is a slow process, and it requires the constant care of the "asador," who is tasked with tending the fire, turning the meat, and watching out for the elements. The meat is typically cooked for 2-3 hours.
The result is a piece of meat that is tender and juicy with a smokey flavor. In this video we can see how the short rib meat easily tears off the bone.
